The "Take and Bake Pizza" concept started
in the Pacific Northwest and is very new east of the Mississippi.
Jonathan Kelley, owner of J's Pizza Market, says the process forces
us to make a better quality product because we cannnot hide things
under cheese. The real benefit to the customer is that you can pick
it up at 4 p.m., put it in your refrigerator and cook it at 7 p.m.
It comes out of your oven, fresh, hot and ready to eat. Thus the slogan,
"We make it fresh. You make it hot."
Gourmet pizzas include the "White Knight" which is made
with fresh basil, oregano and olive oil and topped with four types
of cheeses - Fontina, Swiss, Gorgonzola, and mozzarella. Or the "Cookout",
which is topped with barbecue chicken, red onions, cilantro, mozzarella,
cheddar and olive oil.
Out-of-the-ordinary pizzas include the "Escalante" which
is prepared with homemade black sauce, tomatoes, black olives, red
onions, jalapenos, cilantro, mozzarella and cheddar. Or the "Rai",
which features chicken marinated with oriental sauce, broccoli, scallions,
shredded carrots, slivered almonds, Fontina cheese, mozzarella and
olive oil.
J's Pizza Market also makes unusual sandwiches such as the "Newcomer",
which includes roasted turkey, cucumbers, fat-free dill sauce, provolone
cheese, green leaf lettuce and sprouts. Or the "Tree Hugger",
which is made of mushrooms, red onions, black olives, green peppers,
red peppers, tomatoes, cheddar cheese, green leaf lettuce, avocado
and sprouts.
J's Pizza Market is tucked in the corner of a small retail center
at Little Mountain Road and Mentor Avenue. To create an "authentic"
market atmosphere in this unique 2200 square foot space, awnings are
installed over the interior windows. Outdoor benches are provided
for customer seating and a weathered brick wall is featured with the
faded letters, "Pizza Market". Kelley says they strive to
make the atmosphere fun for customers and employees and to provide
unusually fresh, quality products.
